Study: Refined olive oil best for healthy frying

A recent study found that using refined olive oil can upgrade the healthiness of your favorite fried foods. The research was published in The Journal of Agricultural and Food Chemistry and was carried out by scientists at the University of Sfax in Tunisia. 

Why olive oil?
Scientists deep- and pan-fried potatoes at various heat levels in corn, sunflower, soybean and olive oils. According to Medical News Today, researchers carried out the experiments 10 times and took into account factors present in typical home kitchens. 

Medical Daily noted that virgin and extra-virgin olive oils don't remain stable at elevated levels of heat. The healthy antioxidants and monounsaturated fats present in these oils break down and transform, losing their nutritional benefits and even becoming toxic. The refined type, however, outperformed all other oil varieties used in the study. According to Medical News Today, refined olive oil was able to remain chemically stable, even at 374 degrees Fahrenheit. Conversely, refined sunflower oil showed the quickest deterioration at the lowest temperature. 

Researchers concluded that refined olive oil is ideal to use when frying food because it best retains its nutritional value.
